Salmon with Rice, Almonds, Pine Nuts, Vegetables and Salad

Salmon is not only rich in omega-3. This is a recipe for the perfect romantic dinner.

A ‘big’ recipe. Requires only half an hour to prepare but it has a few parts. It is absolutely healthy, loaded with good stuff. And when prepared with care it makes one of the most romantic dinners! Include wine and candles and no one will be able to resist you. Smile.


Prepare all the ingredients, clean and cut vegetables. The best is to start cooking rice and steaming vegies. Salmon is next. It works out around the same time to finish all.

Once is all ready, only then we prepare nuts. These are done fast in a minute or two. They also require attention as they can get burned within few extra seconds.

(Serves 2)


In between cooking prepare 2 (or more) plates. Dress nicely with salad (lettuce, baby spinach, olive). Add few slices of red paprika for more colour. Squeeze lemon juice on it.


3/4 to 1 glass of Jasmine Rice***

1 table spoon Olive Oil

Black Pepper

1 and ½ glass Hot Water

Salt to taste

Chopped Parsley (green leaves)

*** If you replace it with Brown Rice allow more time for cooking

In a pot heat up tablespoon of olive oil, add ground pepper. When warm add rice and stir well for half a minute or so. (Don’t burn the rice!)

Add hot water. Reduce heat, stir regularly. Add little salt to your taste. By the time water had vaporised rice should be ready. If not (taste it) add little more water and keep cooking. Once finished add chopped parsley leaves and stir. Cover till served to keep it warm.

Note: Rice will be non-sticking due to oil. It is a very different way of preparing rice to Asia.


Pieces of broccoli, green beans, bok choy, carrots, celery... Virtually anything you like or have at home available, to your taste. Steam above boiling water till just cooked. Always avoid overcooking.


2 portions Salmon

Optional – White wine

1-2 Chopped Cloves Garlic

2 table spoons Olive Oil

Black Pepper

Lime or Lemon

Heat a bit of olive oil in teflon pan. Add sliced garlic, fish portions and pepper. Brown both sides. (Optional - add few spoons of white wine).

Reduce heat and roast for approximately 10-12 minutes depending on the thickness (5-6 minutes each side). It is the best to finish cooking once it is just not ‘raw’ in the middle. By cooking any longer it will become drier – less and less juicy. This requires a little practice; or; checking the progress by cutting off a piece.

Note: It is better to marinate Salmon overnight in fridge. Ingredients: White wine and garlic, pepper.

Nuts – this is the funny part

40 grams Flaked Almonds

40 grams Pine Nuts

Sesame Oil

Why funny? It is very easy to burn nuts to ash.

Heat sesame oil in teflon pan. Once warm add almonds. Then pine nuts. Stir. As soon as any of them start turning darker (yellow-gold shade) remove from stove and keep stirring.

Immediately, before the colour becomes ‘gold-ish’ serve on plate.

Because the nuts are so tender, it takes only few extra seconds to burn them. We have to keep on mind they keep roasting due to heat even after removed from stove.

Arrange all nicely on plates. Add lemon to taste. It is great with white wine if you don’t worry too much about calories.
